These four girls are among the 52 winners of the Minnesota Super Bowl Host Committee "Super Snack Challenge"!

When I think of Super Bowl snacks, the word "healthy" doesn't usually cross my mind.

Chili's, monster meat and cheese platters and swimming pool-sized bowls of dip for the dozens of bags of chips for the party I'm at is what I usually relate to when it comes to food.

However, Eva Hunderfund, Grace Schmitt, Isabella Elsinger, and Janea Gaston from Rochester were chosen amongst hundreds of kids ages 8-14 that entered the Super Snack Challenge by submitting a recipe for a healthy gameday snack:

Their recipes were graded on nutrition, ease-to-make, creativity, and taste.

Each of the winners have been invited to attend the Kids Tailgate Party to take place during the 10-day Super Bowl festival. Of the 52 invited, ten "All-Pro Chefs" and their recipes will then be chosen, with the "Super Snack Challenge MVP receiving $25,000 to donate to the charity of his/her choice!

Below are the four winning recipes the girls came up with. Feel free to jot them down in your own recipe books and try them for the big game February 4th!

    Eva’s Recipe: Healthy Rainbow Towers

    INGREDIENTS
     
    30 round whole grain crackers, approximately 2-1/2 inches in diameter
    5 Tbsp low fat cream cheese
    6 oz bag of baby spinach leaves, pre-washed
    6 oz bag small round lean Canadian bacon slices, pizza style
    2/3 cup crushed pineapple, well drained
    6 oz container blueberries
    1/4 red bell pepper, finely diced
     
    INSTRUCTIONS
     
    1.       Spread 1/2 tsp of low fat cream cheese on top of each cracker, leaving a small rim around the edge. 
    2.       Top each cracker with 2-3 baby spinach leaves (removing stems if necessary), 2 small Canadian bacon slices, and 1 tsp of crushed pineapple. 
    3.       Sprinkle approximately 1/8 tsp finely diced red bell pepper on top of the pineapple, then add a blueberry for extra color and taste. 
    4.       Arrange on a tray for serving; best prepared just before eating.

    Grace’s Recipe: Graham-Gurt

    INGREDIENTS

    6 ounce of the yogurt of your choice
    6 ounces of Graham crackers
    1 banana or any fruit of your choice
     
    INSTRUCTIONS
     
    1.       The container of yogurt needs should be in the freezer for 2-3 hours.
    2.       Remove yogurt from freezer and defrost for 35-50 minutes until soft enough to cut.
    3.       Break the graham crackers in half. Cut the yogurt into 1/2 inch pieces and cut the banana into 1/4 inch pieces.
    4.       Put the yogurt piece on the graham cracker, then put 1-2 pieces of banana onto the yogurt and graham cracker.

    Isabella’s Recipe: Fruit Palm Tree

    INGREDIENTS
     
    1 banana for the trunk
    1 apple or orange for sand
    1 kiwi or celery stick for leaves
     
    INSTRUCTIONS
     
    1.       Cut banana into bite size pieces and place it in original shape.
    2.       Cut the kiwi into slivers, place them facing the same way above the banana.
    3.       Cut up apple and place in rows under banana.

    Janea’s Recipe: One Eyed Monster

    INGREDIENTS
     
    1 apple slice
    2 scoops of vanilla yogurt
    1 strawberry
     
    INSTRUCTIONS
     
    1.       Use a spoon to place two scoops of vanilla yogurt on a plate and smooth into a circle.
    2.       Place strawberry on the yogurt so that it will look like an eye.
    3.       Place apple slice on the bottom of yogurt circle to look like a mouth.
